&lt;p&gt;If you’re on a budget, don’t worry, this is pretty cheap to make and will feed at least a family of 4 with seconds! I fed 2 adults, 1 child - 2 bowls each and I still have a 1/2 pot leftover!&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;u&gt;Tortellini Soup Recipe&lt;/u&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Ingredients:&lt;br/&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1 small onion, diced&lt;/p&gt;
&lt;p&gt;3 cloves of garlic, minced&lt;/p&gt;
&lt;p&gt;1 tablespoon of olive oil&lt;/p&gt;
&lt;p&gt;1 can of diced tomatoes, drained&lt;/p&gt;
&lt;p&gt;4 cans of chicken broth&lt;/p&gt;
&lt;p&gt;1 package of frozen tortellini&lt;/p&gt;
&lt;p&gt;1 package of baby spinach&lt;/p&gt;
&lt;p&gt;salt &amp; pepper to taste&lt;/p&gt;
&lt;p&gt;Parmesan cheese for garnish&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Instructions:&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;In a medium sized pot over medium heat, heat the olive oil and add the onions and garlic.  Cook until transparent 3-5 minutes.&lt;/p&gt;
&lt;p&gt;Add the chicken broth. Drain the can of tomatoes and add the tomatoes. Bring to a boil.&lt;/p&gt;
&lt;p&gt;Once the broth is to a boil, add the tortellini and stir. Once they start floating to the top, then calculate the time needed for them to be cooked (check the time on the package you are using as brands vary).&lt;/p&gt;
&lt;p&gt;About 5 minutes into the cooking time of the tortellini, add the entire bag of spinach.  Stir until the spinach begins to wilt. &lt;/p&gt;
&lt;p&gt;When the cooking time for the tortellini is completed, soup is done!  Remove from heat and add salt &amp; pepper to taste.  Sprinkle shaved Parmesan to taste.&lt;/p&gt;
&lt;p&gt;Serve with a side of garlic bread if desired.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Vegetarian version: &lt;/strong&gt;substitute vegetable broth for the chicken broth. &lt;/p&gt;
&lt;p&gt;If you like a more tomato based soup, you can add the entire can of tomatoes including the juice.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Nutritional Info:&lt;/strong&gt; (for soup only, not including garlic bread or the sprinkle of Parmesan cheese)&lt;/p&gt;
&lt;p&gt;Serves 4&lt;/p&gt;
&lt;p&gt;Per Serving (As Per my Lose It App): 211 calories, 5.5g of fat, 33.5g carbs, 9.2g protein, 3.6g fiber&lt;/p&gt;

&lt;p&gt;In this pot, I stir to the sun an’ follow the rule of harming none.  Banishment of bane when goin’ widdershins; an’ with water and salt  negativity is cleansed. Household duties are more than chores. Magick  abounds when mopping floors.&lt;br/&gt;&lt;br/&gt;With this broom, I do sweep to clean  my house and safely keep. Marigold, Basil, Thyme, and Yarrow, my spell  is cast for a better tomorrow.
